Seafood from Shetland has featured prominently on the menu at the Master Chefs of Great Britain (MCGB) 25th anniversary luncheon in London.
Around 350 of the UK ’s finest chefs met at The Sheraton Park Lane Hotel to enjoy a feast prepared by executive chef Andrew Bennett.
For starters there was a selection of canapés using langoustines and sides of organic smoked salmon. The main course was roast fillet of cod in a langoustine, mussel and clam bouillabaisse with smoked sea salt mash and braised fennel.
The seafood that topped the menu came from Shetland companies Blydoit Fish Ltd, No Catch and Blueshell Mussels.
Blydoit supplied langoustines, queen scallops and smoked salmon, No Catch provided organic cod, while the mussels were from Blueshell.
Shetland Aquaculture general manager David Sandison said: “I am very pleased to see that Shetland seafood has again featured on the menu at such a prestigious event.
“This is, without doubt, a result of the quality of our product and the reputation it achieves in the marketplace.”
